This brunch side-dish will knock you off your socks (or was that knock your socks off?)! The name is a little, well, inappropriate, but they are just so darned good. . .
This does cross the line between health and sweets. Heck, this is a straight-up sugary dish--so be warned. It is basically caramelized sliced plantain. The recipe is as follows:
Crack-Nanas:
Serves 2.
Ingredients:
2Tbs cooking oil (Canola or vegetable, etc)
2 ripe plantain (turning black on the skin) **starchy yellow plantain will NOT give the same effect!!**
3-4Tbs of brown sugar
A dash of cinnamon
4Tbs water
2Tbs butter
1/4tsp salt
Directions:
Diagonally slice plantain to form oval disks (~1/2 cm thick)
1. Heat the oil in a skillet
2. Add the plantain and cover. Cook until slightly browned on one side.
3. Flip all the plantain. Sprinkle the sugar evenly over the plantain and add cinnamon (to taste), butter, water and salt.
4. Cover the pan and cook until the sugar becomes caramelized.
I would not recommend this recipe with bananas although I have not
tried. Bananas would likely fall apart in the pan (become mushy). Just sayin . . . If you want them to taste better, try adding more of the 'bad' stuff ^ ^ -->
I most frequently eat the plantain right out of the pan (and burn my tongue almost every time). However, this dish is great as a side on pancakes, and I bet waffles. I have also mixed cooked crack-nanas into banana-bread batter for an extra yum factor!
